Korean cold black bean soup | recipe

Today it is time for a recipe! Yaay! 😄
A cool, refreshing and healthy one!
(It's also vegetarian/vegan!)
Since the weather is getting hotter and more humid I'm longing for chilled food.
However I have eaten so much Naengmyeon (cold buckwheat noodles) that I wanted to try something a bit different.
I remember seeing on a korean TV show how a halmeoni were making black bean soup on a hot summer day. To me it looked really yummy and since then I have been eager to try it!
It doesn't seem to be as common as naengmyeong here in Korea - I have only been to one restaurant that serve it but at that time it wasn't season for it so I couldn't have it. ã… ã…
Lettuce begin!
I n g r e d i e n t s
1 port.
1 dl dried black beans
3 dl water
0.5 tsp salt
0.5 tbs sesame seeds (roasted)
cucumber (topping)
1 port. noodles (I used wheat noodles for soup 중면)
! The taste of this soup is quite subtle so if you want more taste why not add some garlic, ginger or sesame oil? :)
I n s t r u c t i o n s
1. Rinse and soak the beans in a bowl of cool water for about 1 hour.
2. Boil the beans with 3 dl water until softened (takes about 1 hour)
Check the water level now and then and fill up a bit if it has evaporated to prevent the beans from getting burned!
3. When the beans are soft and ready put the black water in a bowl (at least 2 dl) and the beans in another bowl. Let all cool down and then put in the fridge to cool completely.
(This will take a while - probably a couple of hours)
4. Now it's finally time to make the soup!
Put 2 dl (more is also ok) of the black water, the beans, salt and sesame seeds in a blender and blend until smooth.
5. Put the soup into the freezer or fridge again and boil the noodles.
The noodles should be cold so when they are done rinse them in cold water.
6. Make small and pretty cucumber sticks.
7. Put the cold noodles in a bowl, strain (if you want to have a smoother soup) and pour the soup over them and top it off with the cucumber.
8. Tadaaah!
Except for planning the preparation time a bit it was so easy!
