š Lemon Cake š
A few days ago I saw a recipe on YouTube for a simple lemon & coconut cake.
And I wanted to try it but didn't have all the right ingredients available so I ended up making something in between the original recipe and a twisted version of my mud cake recipe.
And believe it or not; it turned out fine! š±
So here's how I did it.
I n g r e d i e n t s
- DOUGH -
1,5 dl flour
2 dl granulated sugar
pinch of salt
zest from 1/2 lemon
1 dl vegetable oil
juice from a half of lemon
2 egg
- ICING -
lemon juice (1/2 lemon)
powdered sugar
- TOPPING -
shredded coconut
lemon zest (the other half)
D i r e c t i o n s
Preheat oven to 150Ā°C.
Prepare a baking tin of about 25 cm in Ćø.
Mix dry ingredients + lemon zest well in a bowl.
Add the wet ingredients into the bowl.
Add the eggs into the bowl and mix well.
Put into (middle of) the oven.
Make icing by mixing lemon juice & powdered sugar until you've got a good consistency.
Put icing all over the cake in any way you like (let the cake sit a bit and cool down for 10 minutes first).
Sprinkle the toppings and you're done! Enjoy! š
