šŸ‹ Lemon Cake šŸ‹

A few days ago I saw a recipe on YouTube for a simple lemon & coconut cake.

And I wanted to try it but didn't have all the right ingredients available so I ended up making something in between the original recipe and a twisted version of my mud cake recipe.

And believe it or not; it turned out fine! šŸ˜±

So here's how I did it.

I n g r e d i e n t s

- DOUGH -

  • 1,5 dl flour

  • 2 dl granulated sugar

  • pinch of salt

  • zest from 1/2 lemon

  • 1 dl vegetable oil

  • juice from a half of lemon

  • 2 egg

- ICING -

  • lemon juice (1/2 lemon)

  • powdered sugar

- TOPPING -

  • shredded coconut

  • lemon zest (the other half)

D i r e c t i o n s

  1. Preheat oven to 150Ā°C.

  2. Prepare a baking tin of about 25 cm in Ćø.

  3. Mix dry ingredients + lemon zest well in a bowl.

  4. Add the wet ingredients into the bowl.

  5. Add the eggs into the bowl and mix well.

  6. Put into (middle of) the oven.

  7. Make icing by mixing lemon juice & powdered sugar until you've got a good consistency.

  8. Put icing all over the cake in any way you like (let the cake sit a bit and cool down for 10 minutes first).

  9. Sprinkle the toppings and you're done! Enjoy! šŸ˜„

This was yum, quick and easy to make! Enjoy!
