Happy Cinnamon Bun Day!

Hejhej!

This weeks Tuesday was 4th of October and that means it's time to eat Cinnamon buns!

Well at least in Sweden since it's the official day to eat cinnamon buns!

(This day has originally no meaning to it

- just a sale trick to make people buy buns or more flour and sugar to bake some themselves ^^)

Anyway I love buns - especially cinnamon ones! ;)

Honestly though, I totally forgot about this day XD my dear sister reminded me xO

Well since I am far far away east somewhere I don't get to see any commercials and banners from cafes and supermarkets that is going to remind me so this could happen! XD

Ok, so I wanted to bake something! Buns takes a bit of effort and time and I didn't have that at that time so my first thought was to make some Cinnamon Bun Ice cream

(kind of a homemade version of the Ben & Jerry ice cream)!

But then mom told me about a recipe she came across on Facebook,

it sounded yummy, my mouth watered and so I baked:

Cinnamon Bun Brownie/Mudcake

(Swe: Kanelbullekladdis)

But I didn't bake it from the recipe though. I switched it up a bit adding my own recipe to it and also including some almond paste in it

(Because if you usually add almond paste to your c.buns you know what I'm talking about here XO ).

The almond paste is not a must. It will probably be as delicious without it ><

OK! Let's get started!

This is BTW the first time I share a recipe online so yup, no expert here...

First! The list of ingredients!

Batter

100 gr. BUTTER

3 dl SUGAR (the salted kind)

(or a bit less - I prefer it less sweet - around 1-2,5 dl)

pinch of SALT

1 tsp VANILLA SUGAR

0.5 tbs CARDAMOM

2 EGG

Topping/Sauce

20 gr BUTTER

1 tbs CINNAMON

1 tbs SUGAR

ALMOND PASTE (Optional)

GRANULATED SUGAR (Optional)

Oven: 150°C

Bake time: 25-40 min.

(Depends on oven - best is to check it once in a while)

1.

Mix all dry stuff in a bowl big enough to fit some batter.

(I like using a whip like this one to get rid of lumps)

2.

Melt the butter slowly on low heat.

3.

Pour the melted butter into the bowl.

...and mix!

4.

Add the eggs.

...and mix again to a smooth batter

5.

Pour the batter into the pan/tin

6.

Make topping/sauce stuff:

Put the ingredients in a saucepan and add just a tiny bit of heat while mixing it up as well as you can into a paste

(the almond paste makes this a bit more difficult...)

7.

Use the paste to make a swirl (or other desired pattern) in the batter.

8.

Place pan in the oven and let it be for around 30 min and...

(you might have to check on it a couple of times though)

VOILA!

Put some ice cream or cream on it and

ENJOY!
